Simmered compote consisting of:
24 oz cranberries, 4 chopped apples, 6 oz chopped raisins, 6 oz chopped prunes, 12 fl oz jar shredded beets, 2 cups orange juice, 2 cups water, 3 oz honey, 24 oz white sugar, 1 Tbsp cinnamon, 1 Tbsp Chinese 5 spice, 1 tsp vanilla extract. Strained liquid into boil a 5 min. Solids bagged and into boil at 5 min. Solids bag into primary fermentation.
1 1/2 qt yeast starter, 1 envelope
Mash at 148° for 75 min
Ferment starting at 65. Raise to 72 over a week. Rack to secondary after 10 days, cool ambient temp.
