Step Mash 15qt (2oz spruce on grain bed):
135F (57C) 10min
145F (63C) 30min
162F (72C) 20min
172F (78C) @ sparge w/14qt
Boil for 60minutes; can sub spalter for tettnager
SPRUCE: 2oz frozen on top of grain sparge; 4oz @ 60min; 2oz flame in wort @flameout
Pitch @ 68F (20C)
Drop to 55F
Initial Fermentation is short (3-4 days)
Rack and crash secondary to "as cold as possible" down to 32F (0C)
