Roast pumpkin at 350-400 for 60-120 minutes (until it begins to caramalize)
Spices
at 5 minutes left
2 cinnamon sticks

2tsp nutmeg
Add 5 oz oak chips to secondary at racking
(soak chips in Bourbon or scotch for 3-4 days prior to adding)
3 days prior to bottling (soak in vodka)
