Ingredients

For 6 Gallons (22.71 L)

    10.5 lb (4.76 kg) Pilsner malt
    0.5 lb (227 g) CaraVienne® malt
    0.5 lb (227 g) wheat malt
    0.5 lb (227 g) flaked wheat
    1.0 lb (0.45 kg) table sugar (15 min)
    0.25 lb (113 g) orange blossom honey (15 min)
    1.0 oz (28 g) Tettnanger pellets, 4.5% a.a. (FWH)
    0.5 oz (14 g) Saaz pellets, 3.2% a.a. (30 min)
    0.5 oz (14 g) Saaz pellets, 3.2% a.a. (20 min)
    WLP500 Trappist ale yeast
    Use RO water treated with 1 tsp gypsum
    1 Tbs Irish moss
 

Specifications

    Original Gravity: 1.065
    Final Gravity: 1.004
    ABV: 8.01%
 

Directions

    Mash grains at 150° F (66° C) for one hour. Fly sparge. Added honey and sugar 15 minutes before end of boil.
    Primary Fermentation for 14 days at 66° F (19° C).
    Secondary Fermentation for 3 days at 74° F (23° C).
    Tertiary fermentation for 7 days at 72° F (22° C).
