16.0 lb (7.26 kg) Maris Otter pale ale malt
1.0 lb (0.45 kg) 60° L caramel malt
12.0 oz (340 g) 120° L caramel malt
8.0 oz (227 g) dextrin malt
8.0 oz (227 g) 200° L chocolate malt
4.0 oz (113 g) 300° L roast barley
2.1 oz (60 g) 500° L black malt
2.0 oz (57 g) E.K. Goldings hops, 5% a.a. (60 min)
2 tablets Whirlfloc (10 min)
2 capsules Servomyces (10 min)
Wyeast 1968 London ale yeast

DIRECTIONS

“Water is carbon filtered and treated with 5.2 pH stabilizer and a bit of Campden to protect against seasonal chloramine in the municipal water supply.” Mash in at 154° F (68° C) and hold for 45 minutes. Mash out at 168° F (76° C) for 10 minutes. Sparge at 168° F (76° C).
Primary fermentation for 4 days at 68° F (20° C).
Secondary fermentation for 1 week at 72° F (22° C).
Forced CO2 to carbonate (1.5 vol).
